400g tin sweetened condensed milk, chilled
600ml thickened cream, chilled
2 punnets fresh strawberries, chilled, washed and hulled

  2. In a stand mixer with a whisk attachment, add cream and sweetened condensed milk to the bowl and whisk on increasing speed until soft peaks form.
  3. Mix one third of the cream and sweetened condensed milk mixture into the jug of strawberry puree until well combined, then gently fold this mixture back into the rest of the cream until blended. Add a few drops of food colouring a this point if you wish, until you reach the colour you like.
