We all know what to do when life gives you lemons…but when life gives you fresh local strawberries, why don’t you make this easy Fresh Strawberry Ice Cream? The simple no churn recipe doesn’t even require an ice cream maker to produce a delicious creamy dessert, straight from the freezer. To enjoy with friends…or keep all to yourself!
Preparation time: 5 hours to overnight
400g tin sweetened condensed milk, chilled
600ml thickened cream, chilled
2 punnets fresh strawberries, chilled, washed and hulled
Pink or red food colouring (optional)
- Place strawberries in a jug and blitz with a stick mixer, or process in a food processor, until strawberries become liquid with a few small (pea sized) chunks remaining.
- In a stand mixer with a whisk attachment, add cream and sweetened condensed milk to the bowl and whisk on increasing speed until soft peaks form.
- Mix one third of the cream and sweetened condensed milk mixture into the jug of strawberry puree until well combined, then gently fold this mixture back into the rest of the cream until blended. Add a few drops of food colouring a this point if you wish, until you reach the colour you like.
- Pour the mixture into a freezer safe container such as a cake tin. If you like, top mixture with a few slices of strawberries to garnish. Cover and freeze for 4-5 hours, or overnight.
