Red Bartlett pears are a naturally occurring mutation of the classic yellow Bartlett pear, boasting a similar flavor but with a vibrant red skin when ripe, making them sweeter and juicier. These pairs are favoured among a variety of desserts due to their deep colour, sweet flavour and smooth texture.
Our spiced vanilla poached pears make for an impressive-looking dessert without a great deal of preparation or effort. Made with delicious Red Bartlett pears that are cooked until warm and soft, completely infused with cinnamon, vanilla, and anise then topped with crunchy almonds and creamy vanilla ice cream.
Ingredients
- 1 ½ cups water
- ½ cup sugar
- 5 Red Bartlett pears, washed and peeled
- ½ cinnamon stick, gently crushed
- 1 star anise
- 1 Teaspoon vanilla extract
- Almond flakes, for serving
- Vanilla ice cream, for serving

Method
- Place the peeled pears in a large pot with the water. Add the sugar, cinnamon, anise, and vanilla.
- Bring to boil and reduce the heat to low. Let it simmer for about 30 to 40 minutes or until the pears are tender and the liquid is thickened like syrup.
- Cut the pears in half and serve with vanilla ice cream, a bit of the leftover syrup & sprinkle over some almond flakes. Enjoy!
