Ginger is a root vegetable that has a spicy flavour, and an invigorating aroma. It produces a warming and fiery taste that gives an unmistakable and comforting kick. Due to its flavour and health benefits it is used in a wide variety of dishes and beverages, both sweet and savoury.

This recipe combines fresh ginger, sesame oil, honey and coconut aminos to create a  sweet, savory and slightly tangy sticky marinate, that’s smothering tender and juicy chicken.  Perfect for quick dinner the whole family will love.

This recipe is  serve over fluffy rice,  but also goes great with quinoa, lettuce cups, noodles or salad.

 

 

 

Ingredients

  • 600g chicken thighs, diced
  • 2 clove garlic, minced
  • 2 stalk spring onion, chopped small
  • 2 tbsp starch
  • 1/4 cup Ceres Organics coconut aminos seasoning
  • 1.5 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 1 tbsp ginger, freshly grated
  • 1 tbsp sesame seeds

Cooking time: 20 mins

Method

  1. In a bowl mix together the coconut aminos seasoning, rice vinegar, sesame oil, honey, ginger, sesame seeds, 1/2 of the garlic & 1/2 of the spring onions.
  2. In a separate bowl combine the chicken and 1/2 the marinade, and mix well. Cover for at least 30 minutes.
  3. When the chicken is done marinating. Save 1 tsp of the starch aside then mix in the rest of the starch in the chicken. Combine well to make sure the chicken are fully coated.
  4. n a non-stick pan, heat up 2 – 3 tbsp of oil for 30 – 45 seconds. Once the oil is shimmering, add in the remaining garlic and spring onion and sauté for 30 seconds or until fragrant.
  5. Add in the chicken. Let each side seer for 1 – 2 minutes or until brown and get a crispy layer on them.
  6. Once the chicken is cooked through, add in the rest of the marinate.
  7. Combined the remaining  starch with 2 tbsp of water. Then add to the chicken. Stir to combine well. The sauce should become thick and sticky quickly. Turn off the heat and continue to gently stir to make sure the chicken cubes are coated in the sauce.
  8. Garnish with additional sesame seeds, spring onion and serve with rice.
