Angelique Eggplants are a creamy flesh eggplant with a delicious flavour. They are rich in fibre and low in calories. They also are a good source of manganese, copper and vitamin B6. It’s a perfect addition to add to the snack list.

Angelique Eggplant Chips are an easy and healthy option to curve the craving for some chips plus getting extra nutritious values.

 

 

 

Ingredients

  • 1 Angelique Eggplant
  • Olive oil, as needed
  • Salt, to taste
  • Ground cumin, to taste (or other spice or herb, as desired)
  • Black and white sesame seeds for garnish (optional)

Cooking time: 60 mins

Method

  1. Preheat the oven to 120 °C
  2. Cut 5 to 6 thin slices of Angelique Eggplant. Make sure you have an even thickness for uniform cooking.
  3. Lightly brush both sides of the eggplant slices with olive oil. Spread the rings on one to two nonstick baking sheets.
  4. Repeat points 2 and 3 for the whole eggplant.
  5. Sprinkle with salt and cumin, to taste.
  6. Garnish with sesame seeds, to taste (optional).
  7. Bake for about 60 minutes or more, until the slices are crisp (the cooking time may vary depending on the thickness of the slices and the humidity of the eggplant).
