These Dorito crumbed mozzarella sticks take the humble cheese stick to another level of flavour. The Doritos make for a crispy zesty crust and the cheese is oozingly melty in the middle when fried. It makes for a delicious snack or finger food idea.

Best part these mozzarella sticks can be frozen and fried whenever you have a craving.

Hardest part of this recipe? Waiting for them to cool enough to eat (and please please please try to wait at least a few minutes!).

Ingredients

  • 2 cups Doritos any flavour of your choice- We used Nacho Cheese
  • 1-2 cups flour
  • 2 eggs, whisked lightly
  • 8 mozzarella sticks
  • Vegetable oil
  • Salsa for dipping

Serves: 16
Prep time: 15 mins
Cooking time: 1 hour 15 mins

Method

  1. Place Doritos in a food processor and process until resembles fine crumbs. Transfer crumbs to a shallow dish. Place flour in a shallow bowl and eggs in another shallow bowl.
  2. Cut each cheese stick in half. Dip cheese sticks in flour and shake off excess. Dip in egg then in crumbs, pressing firmly to coat, repeat until all sticks are covered. It’s important to double coat each cheese stick or else they will not be covered with the Doritos crumbs completely.
  3.  Transfer to the tray and place in the freezer for at least 1 hour to chill. Do not skip this step. Why? Because if you were to drop a mozzarella stick right into the boiling oil, the coating would come off.
  4. Heat oil in a large pot. Using a thermometer to maintain an oil temperature between 180°c and 190°c. Make sure to fry in small batches to avoid overcrowding and remember that the oil’s temperature will drop as you add more sticks. If the temperature drops, wait until it increases before adding more sticks.
  5. Fry sticks until they are golden and crispy on the outside. This takes about 1-2 minutes. Do not leave the kitchen, the Dorito crumbs burn super-fast.
  6. Allow the sticks to cool before serving. Serve with salsa and enjoy!
